Almost homemade

I know the blog is on hold, but I couldn’t resist sharing what I created for dinner tonight… mostly because I threw it together, and it’s awesome. And simple!

Lemon Pepper Baked Tilapia and Salad

  • 3 tilapia fillets, rinsed and patted dry
  • olive oil
  • lemon-pepper seasoning
  • 1/3 cup bread crumbs
  • dash garlic powder
  • dash cayenne pepper
  • Romaine lettuce bunch, chopped
  • slivered almonds
  • Italian dressing (or dressing of choice)
  • Parmesan cheese, crumbed

Preheat oven to 350 degrees F. Butter a glass baking dish and set aside.

To prepare tilapia: Mix bread crumbs, some lemon pepper seasoning, garlic and cayenne. Set aside. Dab each fillet with olive oil. Rub fillets with lemon pepper seasoning to your flavor preference. I went for medium coverage. Dredge (but don’t drown) fillets in bread crumb mixture and place in prepared baking dish. Bake for 15-18 minutes.

To prepare salad: Suuuuuper easy! Mix Romaine, slivered almonds, Parmesan cheese and Italian dressing. Salt and pepper or lemon pepper seasoning to taste.

The salad made me smile. Here’s why!

Slivered almonds for saladI love almonds in my salad, but cannot handle the crunch of a whole almond bite.
