I felt bad enough to blog AND take pictures, but I’ll be going straight back to my textbooks as soon as I finish :)
I attempt to send Husband to work with a packed lunch so he can avoid eating cafeteria food.
Not that the cafeteria food is bad, of course, but home cooked food tends to be healthier. Right?
Plus, at the cafeteria, one could be persuaded or tempted to eat the delicious bacon double cheeseburger and onion rings.
Instead, this is what poor, poor Husband gets for lunch…
Kung Pao Chicken
- chicken breast, cut into 1″ (ish) pieces
- olive oil
- sesame oil
- red pepper flakes
- garlic powder
- green pepper, cut into strips
- Kung Pao sauce (store-bought or make your own… I store bought.)
- white rice, or your favorite grain
Heat the olive oil in a 10″ skillet, or whatever pan you prefer.
Toss the chicken with red pepper flakes, garlic powder, oregano and sesame oil, and then cook on medium-high heat. When the chicken is almost done, throw in the green pepper strips. After a bit, wait until the green peppers start to get soft, throw in about 1/4 cup Kung Pao sauce, or more depending on your saucy-ness preferences.
Meanwhile, cook the rice. Doing it last makes no sense.
